Iced Pumpkin Spice Latte

The arrival of fall means it's officially time for pumpkin spice and apple everything! And you coffee should be no exception. Except it's still pretty hot out most days, so iced pumpkin spice lattes are a great way to bridge the gap between summer and fall. Because we aren't going to let a litte warm weather get in the way of our pumpkin obsession right?

These iced pumpkin spice lattes are vegan and super simple to make. We used cold brew coffee, but you could easily brew your own coffee in a french press and let it sit in the fridge for a few hours. Just remember to brew your coffee darker than you normally would, since there is lots of ice and milk to water this down. Here is a great tutorial of how to make the perfect cup of coffee in a french press.

We used Koffee Kult Dark Roast for this pumpkin spice latte, but the Costa Rica Romelia Coffee would be great in this as well! We used cold brew coffee in this because of it's smooth flavor, so if you have the time to do a cold brew at home, we highly recommend it!  Not sure how to brew your own cold press coffee? Ok back to the pumpkin spice and everything nice. Sure you can go to your local coffee shop and pick up an iced pumpkin spice latte, it will probably cost you a pretty penny. Instead, make it at home for much cheaper and you can control the quality of your ingredients as well! This way you can use the best tasting coffee (Koffee Kult is always our recommendation), real maple syrup, unsweetened milk and your sweetener of choice. Oh and you can add REAL PUMPKIN to this, adding to the antioxidants and make this a darn healthy drink! 

Iced Pumpkin Spice Latte

Ingredients:

1 cup cold brew coffee

1 cup ice

1/4 cup organic pumpkin puree

1 tbs. pumpkin spice

1/2-3/4 cup unsweetened coconut milk

1 tbs. maple syrup

1-2 packets of stevia or your sweetener of choice. 

Optional: to add protein and make this more of a meal, add vanilla protein powder instead of the stevia listed above. This will also make the drink slightly thicker.

Directions:

Add all the ingredients to a blender. Blend on high until smooth.

Divide between two cups and top with whipped cream and a sprinkle of cinnamon. We used SoDelicious Coconut Whipped Cream.
