Espresso Pancakes
This recipe comes from TheSkinnyNoodles, made with Koffee Kult Medium Roast folded right into the batter for a subtle coffee kick in every bite.
Ingredients
- 1.5 cups all-purpose flour, sifted
- 1/2 tsp salt
- 1 tbsp baking powder
- 2 tbsp sugar
- 2 tbsp Koffee Kult coffee, finely ground (Medium Roast recommended)
- 2 tbsp butter, melted
- 1 1/4 cup milk
- 1 egg (or 1.5 tsp egg replacer + 2 tbsp water)
Tip: Grind the coffee fine so it blends smoothly into the batter instead of leaving gritty specks.
Homemade Mocha Syrup
Drizzle this over the stack in place of regular maple syrup for a mocha finish.
Ingredients
- 1/2 cup Koffee Kult Medium Roast, brewed
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup sugar
- 1/4 cup cocoa powder
Instructions
Combine all ingredients in a small saucepan. Cook on medium heat for 3–5 minutes, stirring constantly. Do not let it boil.
Keep in Mind: The syrup thickens as it cools, so pull it off the heat while it still looks slightly thin.
