What Makes Huehuetenango So Special?
Huehuetenango (pronounced way-way-ten-AHN-go) sits in Guatemala's rugged Western Highlands near the Mexican border. Coffee here is grown at elevations reaching 1,830 meters (6,000 feet), making it one of the highest coffee-growing regions in Central America.
Those elevations aren't just impressive on paper. They directly shape flavor.
Warm days encourage healthy cherry development while cool mountain nights dramatically slow the ripening process. This extended maturation gives the cherries more time to develop natural sugars, resulting in beans with greater sweetness, complexity & density.
What Does "Strictly Hard Bean" Mean?
Our Guatemala coffee carries the Strictly Hard Bean (SHB) designation, a grading reserved for coffee grown at the highest elevations, where cooler temperatures force the cherries to mature more slowly.
Slower maturation creates denser beans packed with flavor compounds. During roasting, these dense beans develop exceptional complexity while maintaining clarity and sweetness in the cup.
For coffee lovers, SHB is a strong indicator of premium growing conditions and outstanding cup quality. It's shorthand for "this coffee had every advantage."
European Preparation (EP): A Higher Standard

Before the coffee is exported, every batch is carefully hand-sorted until fewer than eight defects remain per 300 grams of green coffee.
