Homemade Vanilla Frappe Recipe

The biggest bonus to making this vanilla frappe at home is getting to use good-quality coffee as the base. Koffee Kult Medium Roast, brewed slightly stronger than usual, is perfect for this. This frappe is vegan, gluten-free, and low sugar. Coffee is blended with unsweetened coconut milk and coconut cream until frothy, then finished with good vanilla extract and sweetened to taste with stevia or coconut sugar. You can buy coconut cream in a can (Trader Joe's carries it), or just refrigerate a can of full-fat coconut milk overnight — the cream solidifies at the top. Use the remaining coconut milk as a healthy coffee creamer throughout the week.
Homemade Vanilla Frappe
Makes 2 servings · Prep: 5 min + freeze time
Ingredients
- 12 coffee ice cubes
- 1 – 1¼ cup unsweetened coconut milk (carton) or milk of choice
- 1 tbsp coconut cream or whipping cream
- 2 tsp vanilla extract
- 1–2 packets stevia or 1–2 tbsp coconut sugar, to taste
Directions
- 1 Brew coffee and pour into an ice cube tray. Freeze until completely solid.
- 2 Add frozen coffee cubes to a blender. Pour in the milk and coconut cream (or whipping cream).
- 3 Add vanilla extract and blend until no ice chunks remain and the mixture is frothy.
- 4 Add sweetener one packet at a time, blending and tasting between additions. Adjust to your preference.
- 5 Serve in 2 glasses with a straw and enjoy!
