Slightly sweet mocha pillow cookies. Gluten free, low fat, easy to make, and even easier to eat with a big cup of Koffee Kult Costa Rica Romela coffee and a good book. Yes, that is in fact the best way to enjoy these cookies, but we won’t judge you if instead they are eaten during that 3pm slump you seem to have every afternoon at the office. After all, these do have chocolate and coffee in them. And what cures the afternoon boredom better than that? Well a day at the beach, but that’s probably not realistic right?
These cookies are little pillows of chocolate goodness. The coffee just brings out the chocolate flavor even more, and creates this perfect little pillow cookie that instantly begs you to slow down and savor this sweet indulgence. Maybe you bring a few for a friend that’s been a little on the crabby side lately. She doesn’t have to know they are super healthy and you made them in exactly 15 minutes. No, no, all she knows is that you are now a God to her and she must do everything in her powers to continue to be your friend. After all, you bring magic cookies to work.
These cookies also work on in-laws, your boss and anyone else you can think of that needs to think you are extraordinary. Just don’t forget to make a double batch so you can enjoy some for yourself as well!
Many recipes for chocolate cookies or brownies will call for just a tablespoon or two of cold strongly brewed coffee. But really, that’s not enough coffee flavor for us here at Koffee Kult. So we added finely ground coffee right into the batter! Yup, just grind your coffee to an espresso grind and add a teaspoon or two in. Whatever you prefer!! These cookies are vegan, so feel free to taste the batter and decide when the coffee flavor is perfect for you. Just be warned, cookie dough is very addicting, and if you aren’t careful, the batter will disappear before your eyes!
Mocha Pillow Cookie Recipe
1 scoop chocolate protein powder or 1 tbs. unsweetened cocoa powder and 1 tbs. coconut flour
1/4 cup gluten free flour (brown rice flour)
1 packet stevia (2 packets if using unsweetened cocoa powder)
1 tbs. coconut oil
1/4 cup applesauce
1 tsp. almond or coconut milk, unsweetened
1/4 tsp baking soda
1 tsp finely ground coffee,
Preheat oven to 375F.
Add all the ingredients to a large bowl and stir to combine.
Scoop out cookies with a tablespoon, trying to create little pillow shaped cookies.
Bake at 375F for 10-12 minutes. Remove from oven and allow to cool at least 30 minutes before trying, best when cooled all the way to room temperature
